Chicken Quiche

Ingredients

Shortcrust pastry (shop bought)

Boneless chicken 1 cup

Spring onions 1/2 cup chopped

Mushrooms 1/2 cup sliced

Eggs 2

Milk 150 ml

Cream 1/4

Garlic 2 cloves

Butter 2 tbsp

Salt as per taste

Black pepper powder 1 tsp freshly grounded

Red chilli flakes 1 tsp

Nutmeg powder a pinch

Directions-

Preheat the oven to gas mark 180 Degrees.

Heat butter in a pan, add chopped garlic. Stir fry and then add chicken pieces. Fry till they change colour. Next add in the green onions and mushrooms. (You can add other vegetables as well)

Add the salt, pepper and red chilli flakes. Adjust the spice according to your taste.

Now in a bowl, beat the eggs and then add in the milk, cream and the cheese. Season with black pepper, chilli flakes and pinch of oregano and nutmeg powder. Mix well.

Once done, add the chicken mixture to the shortcrust pastry base. Spread evenly. Then pour the egg mixture on the top evenly. You can sprinkle in some more cheddar cheese.

Bake in the oven for 30 mins. To give an extra golden colour to it, you can grill it for 5 minutes.

Yummy n super moist Chocolate Cake

I’m sharing with you all a really easy n extremely delicious Chocolate Cake recipe!

Let’s start off with the ingredients;

225 butter (room temperature)

3 eggs (would be great if they all weigh the same)

350 grams Caster sugar

1 1/4 tsp Vanilla Extract

320 ml milk

300 grams Self-raising flour (you can use plain flour)

6 tbsp cocoa powder

1 1/4 tsp baking soda

1/2 tsp salt

Directions:

Preheat your oven to 180 C / Gas Mark 4 and grease your tin. You can either use 2 small tins or 1 large tin.

Sift together flour, cocoa n baking soda.

Beat together sugar and butter till the mixture is nice n fluffy. Then add one egg at a time. Mix till the mixture is creamy n fluffy.

Fold in the dry ingredients (flour…etc) with a spatula. Once it’s nicely mixed, add in the milk. Mix well till all ingredients are well combined. Pour the mixture into the tin and bake for 35 to 40 mins.

Insert a butter knife, if it comes out clean, it means the cake is ready to be taken out from the oven. Let it cool for at least 20 mins.

You can use buttercream icing or whipped chocolate ganache for topping.

Yummy and Delicious Chicken Patties

Sharing a very yummy and easy peasy recipe of Chicken Patties with you guys. Everyone at my house loves them.

I remember eating them back in Pakistan from the very famous ‘Gourmet Bakery’

Try this recipe and you will actually feel you’re eating Gourmet Bakery Chicken Patties.

Ingredients

Boneless Chicken fillet – boiled and shredded

Puff pastry sheet – 1

Onion – 1 small chopped (just like you chop for omelette)

Milk – 1/2 cup

Flour – 2 tbsp

Black pepper – 1 tsp

Salt – as per taste

Butter or oil – 2 tbsp

1 egg – beaten

Directions

Preheat your oven to 200 C and get your baking tray ready.

Heat the pan and add 2 tbsp butter or oil to it. I prefer butter but it’s your choice to use butter or oil.

Add chopped onions and fry till translucent. Then add black pepper and salt. Mix well and then add the flour.

Cook for 2 mins and make sure flour is mixed well with onion.

After that, add the milk but not all of it. Add in 2 steps. Mix and then add the chicken.

(Please make sure throughout the process the heat should be low)

Once the chicken is added, add the remaining milk to achieve a nice thick consistency. If milk dries up too quickly, you can add 1 or 2 more tbsp milk.

Now put the mixture aside and let it cool.

Now roll out your puff pastry sheet. Use a round cutter or you can use a jar lid.

Cut out round circles or you can cut out rectangles. It’s entirely up to you.

Now, brush all the puff pastry circles with beaten egg.

Place 1 tbsp of chicken mixture on one of the circle, then cover it with the other puff pastry circle, with the egg washed side and press it down from the edges. Lastly take the third egg washed circle and press it onto the second layer. Brush the top layer with egg wash. Your first Chicken patty is ready!

With one sheet you can make around 12 to 15 Patties depending on the size of your cutter.

If you see the picture, you will notice a small round circle on top of the Patties. I did it by pressing the top layer with a small round lid. It gives a nice effect to your chicken patties.

Bake in the oven for 20 to 25 minutes. When the top is nice and brown , it’s time to take out your patties from the oven.

Singaporean Rice

I’m sharing one of my favourite dish, Singaporean rice! Easy to make and really yummy!

Ingredients

Boneless chicken 500 grams (cut in strips)

Ginger/garlic paste – 1 tbsp

Salt – as per taste

Black and White pepper – 1/2 tsp each

Oyster sauce – 2 tbsp

Worcestershire sauce – 2 tbsp

Chilli Garlic ketchup 3 tbsp (use plain ketchup if you don’t have the chilli garlic one)

Green pepper – 1 cut in strips

Green onion – 1

Onion – 1 cut in square pieces

You can add other veggies as per your choice, like cabbage, carrot, mushrooms!

Mayonnaise mixture (mix the ingredients)

Mayonnaise 4 tbsp

Chilli flakes – 1 tsp

Cumin seeds – 1/2 tsp

Ketchup 1 tbsp

Water 1 tbsp

Boil 1 cup white rice (you can make zeera rice)

Egg noodles – 1 cup boiled

Method –

Warm 2 tbsp oil in a pan and add ginger/garlic paste. Fry till it turns light brown. Add the chicken and fry till it changes colour.

Add the salt , black pepper and white pepper. Mix well!

Add in the vegetables and the sauces and mix them all well.

Add 1/2 cup water and cook on low heat. Please do check the taste, in case more salt is needed. Add 1tbsp cornflour mixed in water to the gravy and cook on high heat till it thickens.

Once your gravy is ready, put it aside.

Let’s start the layering now!

First layer is the rice, then pour the chicken gravy on it. Next add noodles on top of the gravy!

***Now here I must mention that some like crispy noodles and some add boiled noodles. I prefer crispy noodles.

I boil egg noodles, drain, and then put them in actifry to make them crispy. If you don’t have an actrifry, you can fry them***

After the noodles, I end the layering with the mayonnaise mixture. I also add roasted salted almonds and cashews for extra flavour!

If you prefer more spice, then in 1 tbsp oil, fry 2/3 slit green chillies and 1 chopped garlic pod. And then pour it on the rice.

And your Singaporean rice is ready!

Daal Maash

This is my husband’s favourite daal! It’s pretty easy to make, no tricky part, sinple and straightforward delicious recipe! 

Ingredients 
Maash daal (Urad) 1 cup ( keep it soaked in water for 1/2 an hour)

Medium size onion – 1 sliced

Medium size tomato – 1 chopped

Salt – as per your taste 

Turmeric powder- 1/2 tsp

Red Chilli Powder – 3/4 tsp 

Green chillies – 2

Fresh corriander – for garnishing 

Directions 

Heat up oil and light golden fry onion in  it. Make sure you you fry them on low heat. Once they are light golden, add the spices along with a splash of water. Fry for few minutes and then add the chopped tomatoes and green chillies.

Once the oil separates, drain out the water from the daal and add it to the pan.

Mix well! 

Now in the next step, I add 1 cup of water and pressure cook this to 2-3 whistles.

If you don’t have a pressure cooker, then you can add 1 1/2 cup water and cook on slow heat.

Once the daal is cooked, garnish with fresh coriander and serve đŸ™‚
