Quick and easy Chicken Chowmein!
For the marinade
Boneless Chicken – 500 gm ( cut into strips) You can also use prawns instead of chicken or beef strips)
White pepper – 1 tsp
Soya sauce – 1 tbsp
Sesame oil – 1 tsp
Dried or fresh egg noodles – 1 packet
Garlic cloves – 2 chopped
Light soya sauce – 3 tbsp
Dark soya sauce – 2 tbsp
Black pepper – 1 tbsp ( freshly grind)
salt – 1/2 tsp ( or as per your taste)
Oyster sauce – 1 tbsp
Green onions – 2 chopped
Capsicum – 1 ( cut in julienne)
Cabbage – small ( cut into 1-inch strips)
Marinate the chicken. Combine the white pepper, soya sauce and sesame oil in a bowl. Add the chicken and mix well! Cover and set aside. ( if you are using prawns, then no need to marinate them)
Cook the noodles in a large pan of boiling water as per the package directions. Then drain and put them in cold water. Drain thoroughly, toss them with 1 tbsp of the sesame oil and set aside. ( When I boil the noodles in hot water, I add 1/4 tsp of orange food colour, just to give them a nice colour. It’s optional, you don’t have to do it.)
Heat 2 tbsp oil in a large skillet or wok. When the oil is hot, add the chicken to it. Toss and turn, stir fry till it is cooked. Please don’t overcook it. Remove the chicken to a plate.
Add another tablespoon of oil to the same pan. Add the chopped garlic, stir-fry! keep the heat on medium. Add in the vegetables. Cook the vegetables for 3/4 minutes. Then, add the noodles along with soya sauce, oyster sauce and black pepper.
Add the chicken, toss to combine. At this moment, please check the taste!
In the end, add 1 tsp of sesame oil to the noodles.
