I saw the fruit basket in my kitchen, and caught glimpse of ripe bananas….and the first thing that came to my mind was “Banana Bread”
My kids just love freshly baked Banana bread straight from the oven! You just can’t compare a home baked Banana bread with a shop bought one!
I’ve tried quite a few recipes, this is by far my favourite one!
I add crushed walnuts and sometimes I add chocolate chips too for an extra flavour that my kids love!
So, it’s really up to you if you want to add walnuts, pecans, chocolate chips or just the bananas!
Let’s get started:)
Flour – 2 cups
Eggs – 2
Bicarbonate of soda – 1 tsp
Soft brown sugar – 1 cup
Vanilla extract – 1 tsp
Salt – a pinch
Butter – 8 tbsp
4 ripe bananas mashed
Walnuts – lightly crushed 1/2 cup
Preheat the oven to 180 degrees
Mix the flour, Bicarbonate soda and salt in a bowl.
Mix together butter and sugar, add in the eggs. (I prefer using soft brown sugar, you can use white sugar if you don’t have the brown one)
Beat them! Then, add the vanilla extract and the mashed bananas. Mix them all together thoroughly.
After that, fold in the flour mixture along with the walnuts.
Pour the mixture into the lightly greased loaf pan.
Bake it in the oven for good 45/50 minutes. Insert a fork or knife, if it comes out all clean, that means your banana bread is ready!
Let it cool for at least 10 minutes and then turn it on your serving plate.
