Zarda is a traditional Pakistani dessert which is a must for every dinner or lunch party!
Rice – 2 cups (80% boiled)
Sugar – 1 1/2 cups
Yogurt – 2 tbsp
Yellow fodo colour – a pinch
Cloves – 2
Green Cardamom – 3
Oil – 2 tbsp
Desi Ghee – 1 tbsp
Boil the water, add a clove and green cardamom to it. Once it starts to boil, add the rice to it. Cook the rice 80 %
Heat the oil and ghee. Add green cardamom seeds, sugar, yogurt and food colour. Mix on high heat. Add rice to it and mix well. Make sure the rice gets a nice good yellow colour. If you feel , you need to add more colour then please do!
Cook on high flame for 2 minutes and then lower the heat. Cover the pan with a lid and put on dum for 10/15 minutes. I usually first cover the pan with kitchen foil and then put the lid on it.
